This Six-Veggie Vegan Pizza Is A Great Alternative To Delivery

If your options in your area are limited when it comes to vegan takeout, why not try making your own? Pizza is a classic takeout option, and vegan pizza is easier to make at home than you might imagine – even with a homemade crust. Here's a recipe for filling, humane, 6-veggie vegan pizza to get you started.

Crust Ingredients:

  • ¾ cup water
  • 1 teaspoon active dry yeast
  • 1 ½ cups all-purpose flour
  • 1 tablespoon olive oil
  • ½ teaspoon sugar
  • 1 teaspoon salt

Topping Ingredients:

  • 2 cups soy cheese of your choice, shredded
  • 1 medium onion, sliced
  • ½ cup button mushrooms, sliced
  • ¼ cup jarred banana pepper slices
  • 1 jarred, roasted red pepper, sliced
  • ½ cup broccoli florettes
  • 1 cup baby spinach leaves
  • 2 tablespoons olive oil
  • 1/8 teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground cayenne pepper
  • 1 cup of your favorite jarred pizza sauce

Directions:

Start by preparing the pizza dough. Mix the yeast, sugar, and water together in a medium bowl. Let rest until bubble and fully dissolved. Add about half of the flour along with the salt and olive oil. Stir to make a soft dough, and then slowly add the remaining flour while continuing to stir. Knead on a floured surface for 5 minutes. Place in a greased bowl, and let rise in a warm place for 1 hour.

While the dough is rising, work on preparing the veggies. Place the olive oil in a skillet, and add the onions and mushrooms. Saute for 3 minutes, and then add the broccoli and season the veggie mix with the salt. Saute for another 3 minutes, and then add the spinach. Saute just until the spinach leaves are wilted. Set these veggies aside.

Once the dough has risen, punch it down to remove the air pockets. Shape it into a ball, and then set it aside to rest for 20 minutes before stretching it into a round pizza crust approximately 12 inches across. Place the crust on a pizza pan, and top it with the pizza sauce. Next, layer on the soy cheese, followed by the red pepper, banana peppers, and the sauteed veggie mixture. Sprinkle with garlic and cayenne pepper, and bake in a 400 degree F oven for 16 – 18 minutes.

The pizza is done with the crust is brown on the bottom and the cheese is melted and bubbly. Leftovers are excellent when reheated in a toaster oven.
